The Mathematics of Deboning Reversal
When projecting forward from a hanging carcass, we multiply by 0.70 because the final boneless meat makes up roughly 70% of the carcass weight (with the remaining 30% being bone and trim). To calculate backward from the meat to the carcass, we divide by 0.70.
