Going from an imperial hanging weight to a metric boneless yield requires two separate mathematical transformations happening simultaneously behind the scenes.
Step 1: Deboning Yield
A typical sheep carcass is composed of roughly 70% meat and 30% bone and fat. To find the meat yield, we first multiply the carcass weight by 0.70.
Step 2: Metric Conversion
Once we have the boneless meat yield in pounds, we must convert it to kilograms by dividing that number by 2.20462.
